Tomorrow’s Day on a Plate

I had such a junky weekend!  Hold me accountable!

Breakfast: I probably won’t have time to make a juice or a smoothie before my 9am class, if I do that’s great but I will probably start with organic yogourt and some orange slices.  

Snack: (It’s a 3 hour lecture!) Mary’s organic crackers and maybe some seeds and celery if I have time to slice it up beforehand.

Lunch: A green juice (kale/chard/spinach mix, cucumber, celery, granny smith apple, lemon).

Snack: Crackers and sliced cucumber or celery.

Dinner: Quinoa, lemon, garlic roasted carrots, spices.

Snack: Yogourt

That smoothie…

Was way too many ingredients at once!  Tomorrow I’m going simpler.  I wanted to pack in as much good stuff as I could but it was just too mnay flavours competing with each other at once.

Homemade hemp milk (I will post about this later), a banana, strawberries, frozen raspberries and kale/spinach/chard mix (all fruit and veg organic), about 2 tbsp of shelled hemp, a sprinkle each of slippery elm bark and bee pollen, a tbsp of organic pumpkin seed butter and a splash of coconut water.  
It tastes mostly like hemp/roasted pumpkin seeds with vague hints of the fruit.

Smoothie!

Today’s Actual Day on a Plate

Got really lazy with my food today!

Breakfast:

Mint chocolate chip smoothie, a coffee with coconut creamer and a piece of gluten free toast with garlic coconut spread

Snack:  Vegan/gluten free double chocolate chip cookie and two cantaloupe wedges and a ring of pineapple

Lunch:

Mary’s organic/gluten free crackers with hummus

Snack: Another cookie with 1/2 cup organic milk and about a cup of yogourt (apricot-mango, organic, 2% fat)

(I just ate this last snack and my stomach does not sound happy :( I think it was the milk, not the yogourt)

Today’s Future Day on a Plate

Breakfast:

Mint chocolate chip smoothie (coconut milk, spinach, peppermint, banana, raw cocoa nibs, maca, hemp protein) Note: I don’t make this, I get it at my local vegan restaurant :)

Coffee with coconut creamer

Snack:

An orange and some pumpkin seeds (both organic)

Lunch:

Mary’s organic gluten-free crackers, hummus and soup (not sure yet, I have a bunch of the happy planet ones in the fridge so which ever expires the soonest)

Snack:

Greens+ powder in water with a teaspoon of slippery elm bark added (will always be detoxing as long as I am eating white bread and dairy)

Dinner: 

Probably some quinoa topped with tomatoes cooked in balsamic vinegar/glaze with olive oil and roasted garlic carrots (quinoa and carrots organic, the tomatoes I got because they were the only Canadian ones left)

Dessert: 

A vegan/gluten free double chocolate cookie if my vegan place has them, if not a square of dark chocolate or a small amount of coconut milk chocolate ice cream

Snack: 

Green juice time!  

2-3 cups of spinach/kale/chard mix, small granny smith apple, a lemon, a kiwi plus celery and cucumber if I get to the store (all organic)

Before bed:

Dandelion root/leaf tea with local honey

Plus 6-9 cups water through today

My dad made me a kick ass vegan hash/scramble thing.  It had potatoes, celery, onions, mushrooms and seasoning salt. Possibly some other stuff but that’s all I can remember.  He fried it up in a frying pan.

Über delicious salad for dinner: radishes, romaine lettuce, tomatoes, cucumber, fresh basil and parsley and lemon garlic dressing (lemon juice, olive oil, garlic, salt and pepper).  Tore up some fresh baguette in as croutons too (not pictured).  It makes all the difference when the veggies are super fresh.

1/3 cup chopped broccoli stalks included
1 tsp olive oil
1/2 tbsp balsamic vinegar
Juice of 1 lemon wedge
1/2 tsp lemon zest
1/2 chopped fresh basil

A super light and fresh salad for summer :)

Bumper crop of blueberries this summer! We have two bushes at my house, and the berries in the white ramekin are the most I have ever picked in one day.
